The following malts are available in unpackaged, bulk quantities.

Base malts:

    Premium 2-Row Malt (1.8-2.2°L)
    Our most popular base malt, perfect for all beer styles, especially American ales and lagers. With moderate protein and enzyme levels and a very clean, smooth finish, our Premium 2-Row Malt is ideal for all-malt beers and for mashes containing moderate levels of adjunct.
    Northwest Pale Ale Malt (2.6-3.0°L)
    A slightly darker base malt than our Premium 2-Row, our Northwest Pale Ale Malt is produced from well-modified, Western-grown 2-Row barley, with a kilning regimen based closely on traditional British Pale Ale malting practices. Contributes a malty complexity to beer flavor and aroma. Excellent in American Pale Ales and American versions of British beer styles.

Specialty malts:

Munich Malt (8-10°L)
Great Western Munich malts are produced in the traditional European manner, using selected higher-protein 2-Row barleys, malted to achieve high levels of protein solubilization and color formation. Munich Malt can be used as a base malt for bock beer and doppelbock. Used in smaller quantities in Dunkel Lagers, IPAs, Ambers, and wherever increased malt flavor and aromas are desired, but without introducing caramel/crystal flavors. Can be used at 20%-70% percent of the grist.

Vienna Malt (3-4°L)
Can be used as a base malt to give increased malt aroma and flavor over a base 2-Row malt. Traditionally used in Vienna Lager and Märzens. Excellent in IPA and American Wheat Ale, where a golden maltiness is desired but crystal sweetness is not. Normally used at 10%-15% of the grist.

Wheat Malt (3.5-4.0°L)
Our fully modified white wheat malt is kilned for flavor and to enhance malty character. Perfect for brewing American Wheat Beers or traditional German Weissbiers. Our Wheat Malt has enzyme levels similar to our 2-Row malt, and can aid in converting raw wheat or other unmalted fermentables. A small amount of Wheat Malt can significantly enhance foam development and head retention.

Northwest Crystal malts:

Malted and roasted in small batches at Great Western’s Vancouver, Wash., roast plant, our Northwest Crystal malts are made exclusively from the choicest Western-grown 2-Row barleys.

Northwest Crystal C15 (13-17°L)
Contributes a light golden color and a subtle sweet, malty, mild caramel flavor.

Northwest Crystal C30 (27-33°L)
Provides a light copper color and a moderately sweet, malty, mild caramel flavor.

Northwest Crystal C40 (27-33°L)
Provides a light amber-reddish color and a medium sweet, malty, caramel flavor.

Northwest Crystal C60 (55-65°L)
Contributes a reddish-amber color and pronounced toffee and caramel flavors. This is a great midrange crystal malt, perfect for Reds, Ambers, Porters and other dark or big beers.

Northwest Crystal C75 (70-80°L)
Malted in small batches from Western-grown 2-Row barley, Crystal 75 is caramelized at high humidity and roasted. It provides a deep red color and a complex strong caramel and dark-toffee flavor.

Northwest Crystal C120 (115-125°L)
Malted in small batches from Western-grown 2-Row barley, Crystal 120 is caramelized at high humidity and roasted for a longer time. It provides a dark, red-brown color and an intense toffee-caramel flavor, while avoiding the burnt character of chocolate or black malt. Contributes raisin and Madeira notes to dark specialty beers.

Northwest Crystal C150 (145-155°L)
Provides a very dark color and an intense caramel and slightly burnt-toffee flavor. Contributes raisin and Madeira notes to dark specialty beers.

Bairds Crystal Malts:

Bairds Crystal malts are produced from well-modified green malt, utilizing premium British barley varieties with excellent hull retention. This helps to avoid localized charring on the grain surface during roasting. Bairds Crystal malts are available in bulk quantities from our Vancouver, Wash., location.

Bairds Crystal (30-37°L) (Carastan)
A light crystal malt with a distinctive, sweet toffee flavor. At low addition rates, Caramalts can be used to provide color and flavor in Lagers, and at higher addition rates are perfect for production of Ambers and Pale Ales.

Bairds Crystal (50-60°L) & Bairds Crystal (70-80°L)
With more intense toffee and caramel flavors, these darker Crystals have been used traditionally in the United Kingdom to give the characteristic color and flavor of U.K. Bitters and Pale Ales. The darker crystals are excellent for reddish-brown ales.

Bairds Crystal (135-165°L)
A highly roasted crystal malt having an intense caramel flavor and slightly burnt notes. Used in Dark Ales, Porters and Stouts.

Certified Organic Malts:

Great Western’s Vancouver, Wash., plant is certified as an Organic Food Processor by the Washington State Department of Agriculture in accordance with Title 7 CFR Part 205 of the National Organic Program (NOP).

The flavor and performance characteristics of the organic malts are similar in all regards to their nonorganic counterparts, as described earlier.
